What is honeycomb candy?
Honeycomb is also known as Karume Yaki in Japanese or Dalgona in Korean (yes, it’s the candy you saw in Squid Game). You’ll caramelize sugar and then add baking soda. The baking soda is activated by heat and creates gas (it’s really fun to watch). The gas gets trapped in the candy, creating air bubbles in the honeycomb candy. It is named because it resembles a honeycomb.
No-churn ice cream
No-churn means you don’t need an ice cream maker. It is richer and creamier than traditional vanilla ice cream. It is so easy and customizable. Since this ice cream is on the sweeter side, I like my honeycomb slightly bitter to balance out the flavors when you eat them together.
Ingredients and tips
This recipe uses vodka. Since vodka never freezes in a standard freezer, ice cream stays soft, not icy. You don’t taste vodka at all. But if you want to omit vodka, you can. Put them in a freezer-safe container and freeze overnight. This recipe makes about 4 pints of ice cream.

Ingredients
for HoneyComb Candy
5 tablespoons sugar
2 tablespoon honey
1 teaspoon baking soda
for Ice Cream
600ml heavy cream
1 can (14oz) condensed milk
1 tablespoon vodka
Preparation
Make honeycomb candies. Place a parchment paper or silpat on a baking sheet. Set aside.
In a small pot, melt sugar and honey. Once it is bubbling and the color turns amber, add baking soda. Using a rubber spatula, mix a few times. When it rises up. Remove from the heat and immediately pour on to the parchment paper/silpat lined baking pan. Cool it in the room temperature.
Once the honeycomb is cool to touch, break them into pieces. Set aside.
Make ice cream. In a large bowl, add heavy cream, condensed milk and vodka. Using a stand mixer or hand mixer, Whip them until soft peaks.
Add the honeycomb pieces in, and using a rubber spatula fold them in.
Pour the mixture into freezer safe containers. Freeze overnight.
