irene’s poor man’s nougat
Don’t tell your snobby friends that this nougat is made of these three ingredients: Nonfat Dry Milk Powder, Marshmallows and Ritz Crackers.
Ingredients
makes quarter sheet pan
1 stick (113g) unsalted butter
283g mini marshmallows
97g nonfat dry milk powder
120g Ritz crackers, lightly crushed by hand
50g dried cranberries, roughly chopped
60g pistachios, toasted
20g freeze-dried raspberries, lightly crushed
Preparation
Line a baking pan (I used a quarter-sheet pan) with parchment paper and grease or spray it with oil. Set aside.
In a large non-stick pot or Dutch oven over medium-low heat, melt the butter. Once the butter is completely melted, add the marshmallows. Continuously stir with a rubber spatula or wooden spoon until the marshmallows are completely melted.
Add the milk powder and mix constantly until it completely dissolves.
Turn off the heat, and add the Ritz crackers, pistachios, cranberries, and freeze-dried raspberries. Mix well until all the ingredients are evenly coated.
Remove the pot from the stove and transfer the mixture into the prepared baking pan. Use a spatula to evenly spread the mixture. Cover it with a piece of parchment paper and press it firmly using a flat-bottom jar or glass until the mixture is well compressed, and the surface is smooth.
Let it cool completely, then cut it into bite-size pieces. Store it in an airtight container.
